Abstract: The texture of fruit and vegetables is an important quality criterion. Crisp and firm apples stand for freshness. The softening of the fruits is caused by the change of the cell wall polysaccharides. The pectolytic enzymes play a major role in the degradation of the cell wall material. Pectinesterase, exo- and endopolygalacturonase activities were determined in apple. The aim of this work consists in determining the activity of the pectolytic enzymes of apples with in the college of Neubrandenburg to available chemicals and devices. In order to characterize the apple enzymes, the influence of the pH value is examined on their activity.
